Salmon Salsa Verde & Pasta by Gail

500g Salmon.
Preheat oven to 180degrees, a little oil over salmon, salt and pepper - Bake for approx 15mins -set aside.
Salsa Verde.
1X75g baby capers, rinsed and drained.
3 drained anchovy fillets, finely chopped.
2 cloves of garlic - crushed
3/4 cup chopped parsley
1/4 cup of fresh dill
2 teaspoons grated lemon ring
80ml (1/3 cup lemon juice)
1/2 cup virgin olive oil.
Combine capers, anchovy, garlic, parsley, dill, lemon ring, lemon juice and oil. Flaked salmon.  Toss.
Cook pasta - toss Verde through pasta, serve if you like with Parma cheese. YUM YUM YUM.
