Baba Ghanoush

Baba Ghanoush is a creamy Middle Eastern dip or appetizer. It is made with roasted and mashed eggplant, garlic and tahini. Serve with Pitta bread or crackers.

Ingredients
One large clove of garlic (cut in four)
One large eggplant
One-tablespoon tahini (Available at most supermarkets, Delis and health food shops)
Lemon juice
Pepper and salt

Method
1. Roast a large eggplant at 200 C for 30 minutes or until soft (there is no need to sit eggplant with salt on it, prior to cooking to rid it of bitterness; Australian eggplants do not have the bitter characteristic).
2. Allow the eggplant to cool.
3. Peel the eggplant and place in the jug or container that you will process the dip in with your bamix.
4. Add to the eggplant 1-tablespoon of tahini, the garlic, plenty of lemon juice and pepper and salt.
5. Process with your bamix.

TIP: when using pepper and salt, one can ruin a dish by adding too much. Be conservative when seasoning as you can always add a little more but you can't take it away.
