Recipe by Holly Richardson - Torquay

Hi Hugo, these cookies are a favourite and never last long at home so i thought i would share the recipe with you. They are very special cookies and once you've made them you wont make any other kind again!

250g Butter
1 Teaspoon of vanilla
165g Castor sugar
165g Brown sugar
1 Egg
330g Plain flour
1 Teaspoon of bicarb soda
300g of roughly chopped DARK chocolate

1. Beat butter, vanilla, both sugars and egg with an electric mixer until light and fluffy.
2. Mix the flour and bicarb together and sift into butter mixture in 2 batches.
3. Stir in chopped chocolate.
4. Refrigerate for 1 hour.
5. Place teaspoon sized balls of the dough on greased oven trays 3cm apart and bake at 180 C or 160 C fan forced for around 12 minutes.
6. Enjoy while still warm and soft in the middle!
